First: to prepare the sauce: Roast the peppers, remove skin, seeds, veins and stalks, after soaking in water for 5 minutes. Grind in a food processor the following ingredients: sesame seeds, fried tortilla, onion, cinnamon, pepper, sugar and chocolate, and finally add the chiles and grind again.
After: Place in a pan with hot oil, fry until it thickens, add salt and rectify the broth.
Then: Prepare enchiladas: Fry the tortillas in hot oil and then roll in mole, add the meat and roll
Finally, serve two per plate topped with the sauce, sprinkle with cheese and sesame seeds and garnish with onion rings.
